Title: Roasted Greek Potatoes w/Feta Cheese

Yield: 8 servings
2/3 c Water
1/2 c Olive oil
3 tb Lemon juice
4 Garlic cloves, minced
2 ts Dried oregano
1 ts Salt
1/2 ts Pepper
3 lb Yukon Gold potatoes (about 6
-medium), each cut into 8
- wedges
3/4 c Crumbled feta cheese
Set oven to 450oF/232oC.
In a small bowl, whisk the first 7 ingredients. Arrange
potatoes evenly in a shallow roasting pan. Pour water
mixture over top.
Roast until potatoes are golden brown and tender, 40-50
minutes. Sprinkle with cheese.
