I have a cat that likes to chew plastic. I've taken great care to remove anything plasticy but theres still some items that can't be removed. For example the draft trim that goes around the door. Anyone have any ideas
on how I can stop or hinder this behavior.

Maybe use a "distraction technique" like catnip placed near where she's chewing... or throw one of the cat's toys over to her?

The toy might work better than catnip. Some cats love it, but others
aren't even fazed by it.
